Winter Kitchen Inspo

It’s been a few months since we closed the shutters on the shop. On the cold and frosty days I have to say that I don’t always miss the cold toes and fingers from being in the shop! However, what I do miss is the interactions with the people, finding out about what they are up to and also sharing seasonal produce stories and swapping recipes.   I’ve also had a few regular Build your Own Box customers seeking some inspiration of some winter warming recipes so sharing a few of our family favourites. 


Roasted Squash and Kale Nutty Bake


This delicious recipe can be prepped in advanced and warmed up or cooked to order so makes a perfect mid week nutritious dinner.


Ingredients

  • One Large Squash

  • 250 g Kale

  • Handful of pecan nuts and handful of walnuts (or nuts of your choice)

  • Drizzle of honey

  • Chilli - flakes or fresh

  • Soft blue cheese (optional)


Directions

  • Deseed the squash.

  • Cut the squash into 2cm pieces (keep the skin on) and place on baking tray.

  • Drizzle with olive oil and honey


  • Cook squash in medium oven for around 45 minutes or until the squash is soft and caramelised

  • Wash the kale well and add it to the squash for 5 more minutes in the oven - adding a drizzle more of olive oil and seasoning - sprinkle the chilli if using

  • Whilst the kale is cooking pop the nuts into a dry frying pan and blast them on a high heat for a few minutes making sure to keep moving them

  • Layer the squash, kale, nuts and cut the blue cheese into chucks and sprinkle over the veg and eat!


Omit the cheese and honey and this is perfect for vegans or use some cubed well cooked chorizo instead.


French Farcie


This is a great all in one veg and protein meal - it can be made with any kind of mince and any kind of veg!


Basically you stuff the veg with ragu - you can use any kind of veg  courgette, peppers, aubergine…


To make the filling I soften some chopped onions in a pan with some olive oil, add in some mince (can be soya protein mince or lentils), add some finely chopped carrot, leeks and cover in stock to simmer with a bay leaf, seasoning and a dash of Lea and Perrins. Cook down the mince until most of the liquid has gone and then stuff the veg with the ragu and cover with foil and bake in the oven until the veggies are soft.
